The manic quest for sugar free treats continues. Cleantella is great but sometimes ya just want cake. Last night, my friends, was one of those times. It was getting late and my need for chocolate was reaching critical status. I needed something quick to fill the void and these babies delievered. Piss easy, really quick, pretty much the same as the real deal but sugar and grain free and high protein – bonus!
1 1/3 cups honey
1 cup of melted butter or coconut oil (coconut oil is definitely the healthier option here but I didn’t have any to hand. Plus, butter is not actually the bad guy we’ve all been brought up to think it is – more on this tomorrow!)
2 tbsp vanilla extract /essence
2 cups ground almonds
1 cup raw cacao
1/2 tsp baking powder
1/2 tsp salt (if not using butter)
Get your oven heating to 190C.
Whack the honey, butter, vanilla and eggs in a bowl and mix em up until smooth.
Add the ground almonds, baking powder, cacao and salt (if using).
Line / grease up a baking tin (mine is 12″ x 10″ x 2.5″).
Pour the delicious chocolately goop into your tin.
Whack her in the oven for 25 mins and voila!!
Let it cool for a little while in the tin on a wire rack then slice em up and stuff face!
